Using A Dehydrator

I have found that this Paleo cereal recipe does best with a dehydrator! Do you have one?

For under $50, you can get one and use it for so many amazing recipes!

Here are just a few of my favorite ways I use my dehydrator:

There are so many ways to use a dehydrator. Here is the dehydrator that I have. You can spend a small fortune on a dehydrator, but I don’t think you need too! This one has lasted years for me and it is under $50!

4-Tray Food Dehydrator

If you wish to not purchase a dehydrator, you can use your oven on the lowest setting. You might need to pull out your instruction manual to reconfigure your oven setting to go to a lower temperature.

A Healthy Portion

This is an actual serving pictured above. Nuts are very nutrient dense, so do note that 2/3 cup is a serving and it will carry you through all the way to lunch!

Be sure to not go overboard with the serving size. A little goes a long way and you will be amazed how a smaller serving will satisfy your needs.

Start out small and if you need to increase or decrease the serving size for your caloric needs, then do so by adding or reducing a little at a time until you find the right size that fits your dietary needs.

Should You Soak The Almonds

I want to note that it is best to soak the almonds to break down the phytic acid. Soaking alsoneutralizes the enzymes which help in aiding with proper digestion. If you choose not to soak the almonds, this recipe will work just fine without soaking.

Description

Are you looking for a gluten free and grain free, Paleo cereal recipe that has a terrific crunch even at the last bite? Look no further, here it is!

Ingredients

  • 1 cup Shredded Coconut
  • 2 cups hot water
  • 1 pound Raw Almonds (about 3 1/2 cups)
  • 1 1/2 tsp ground cinnamon
  • heaping 1/2 tsp sea salt
  • 3 tbsp Coconut Flour
  • 1/3 cup Raw Honey (melted slightly)
  • 1 tsp vanilla
  • 1 cup Coconut Flakes
  • 1/2 cup Dried Cranberries

Instructions

  1. Preheat oven to lowest setting. If using a dehydrator, dehydrate at 165º F.
  2. In a Vitamix or high powered blender, add almonds and blend until an almond meal (fine consistency) forms. Don’t over blend your butter will form. Add to a large bowl.
  3. Add the shredded coconut (not flakes, that comes in later) and hot water to the high-powered blender and blend for 1 minute. Strain and reserve liquid, AKA coconut milk.
  4. Add the coconut flour, cinnamon, and salt to the almond flour mixture and stir to blended.
  5. In a medium bowl combine the coconut milk, honey, and vanilla and stir until blended.
  6. Stir the wet ingredients into the dry ingredients and stir until well combined.
  7. Stir in flaked coconut and dried cranberries and allow to sit for 5 minutes.
  8. Stir lightly one more time and then place this mixture onto a cookie sheet lined with ungreased parchment paper. Pat out into a thin layer.
  9. If you have a dehydrator, you can use your tray made for fruit leather. You will have to flip it over half way through the cooking time.
  10. Cook for 10-12 hours or until dry. This could vary greatly depending on which method you are using to dry the cereal.
  11. At the five-hour mark, I usually break up the pieces a bit and try to flip them over. This in not absolutely necessary though.
  12. Once you’re done cooking the cereal, cool cereal completely. Store in an airtight container in a cool dry place.
